Entree
Guests have a choice of one of the following entrée’s:

  • Tarragon brined Fraser Valley breast of chicken, lacto fermented seasonal Okanagan fruit gastrique, preserved lemon, confit garlic & herb risotto, summer vegetable ragu
  • Char grilled wild Halibut filet, Tahitian lime pepper, citrus herb butter emulsion, preserved lemon, confit garlic & herb risotto, summer vegetable ragu
  • Braised “Black Apron” grass fed boneless beef short ribs, caramel soy glaze, toasted peanuts & fresh coriander, preserved lemon, confit garlic & herb risotto, summer vegetable ragu

Dessert
Please choose one of the following options for all of your guests to enjoy:

  • Dark Callebaut chocolate custard, chocolate cookie crumble, Okanagan raspberry coulis, caramelized sugar sail & freshly whipped cream
  • Sweet & tangy lemon torte, almond meringue crust, Grand Marnier macerated berries, candied lemon & freshly whipped cream

At Flambe Catering we are flexible when it comes to the menu.  If you see an item from one our other delicious menu’s that you would like to substitute, please let us know and we will do our best to accommodate this.
