House Charcuterie & Anti Pasto Platter with the chef’s selection of house salted, cured & smoked charcuterie –  Spanish dry cured chorizo, Finocchiona salami , spicy coppa & red wine bresaola, Paradise Valley pork & Summerland Morel mushroom pate, Pecorino a Paglia, Gorgonzola picante, soft goat cheese & balsamic onion jam, fresh table grapes, marinated olives, herb & rice dolmades & a variety of house pickled vegetables (curried cauliflower, spicy asparagus, dill carrots, bread & butter pickles and pickled garlic scapes)  – Items subject to change, ask for today’s selection

Local organic field greens, maple pecans, seasonal Okanagan fruit, house pickled red onions, Pecorino Romano & tarragon mustard seed vinaigrette

  • Char grilled wild salmon filet, tahitian lime pepper & preserved lemon emulsion
  • Fennel & coriander crusted Italian style Porchetta, herb & lime chimichurri (Porchetta is a 3 day process to prepare and is one of Flambe’s most highly acclaimed dishes!)
  • Tarragon brined free range chicken breast supreme, lacto fermented seasonal Okanagan fruit gastrique (best late May to early September)
  • Brined free range chicken breast supreme, tarragon scented demi cream (best late September to early May)
  • Braised boneless beef short ribs, caramel soy glaze, toasted peanuts & fresh coriander (best mid May to Mid September)
  • Braised boneless beef short ribs, brandy & thyme scented demi glace (best mid September to early May)
  • Char grilled wild halibut filet, sweet Penang style coconut curry & Thai basil – add – $2.50 pp

At Flambe Catering we are flexible when it comes to the menu.  If you see an item from one our other delicious menu’s that you would like to substitute, please let us know and we will do our best to accommodate this.
